3 Tablespoons Olive Oil

2 Medium Carrots, peeled and chopped

1 Large Yellow Onion, chopped

3 Celery Ribs, coarsely chopped

4 Cloves Garlic, chopped

12 Ounces Calico Bean Blend, thoroughly rinsed

8 Cups Vegetable Broth

3 Fresh Sage Leaves

2 Bay Leaves

1 Tablespoon Fresh Thyme, chopped

1 Medium Zucchini, chopped

1 Cup Tomato Purée

Kosher Sea Salt Flakes

Fine Ground Black Pepper

DIRECTIONS

Heat oil in large pot, add carrots, onion, celery and garlic and cook until softened.

Add Calico Soup Blend to pot, along with broth, sage, bay leaves and thyme. Bring to a boil, lower heat and simmer 1-1/2 to 2 hours, adding more water if necessary to keep ingredients covered.

When beans are almost done, add tomato purée and zucchini. Cook 10 more minutes. Season to taste with salt, about 1-1/2 teaspoons, and black pepper.
