  • 1/2 Cup Heritage Rice & Grain Blend

  • 1 Romaine Head Or Heart

  • 12 Grape Tomatoes

  • 1/4 Small Red Onion

  • 2 Cloves Of Garlic

  • 1/2 Lemon, juiced

  • 1/4 Cup Parmesan Cheese, plus 2 tablespoons

  • 2 Tablespoons Red Wine Vinegar

  • 2 Tablespoons Olive Oil

  • 1 Tablespoon Mayonaisse

  • 1 Tablespoon Dijon Mustard

  • 1/4 Teaspoon Ground Black Peppercorns Dustless

  • 1/2 Cup Croutons



  1. Cover the Heritage Rice & Grain Blend with 2 cups of water and a pinch of salt in a 1 quart sauce pan. Bring to a boil and cover, turning down to a simmer. Cook for 60-70 minutes until the grains are tender and remove from the heat, set aside. After 10 minutes drain any excess water and spread the blend onto a sheet pan.

  2. Remove the outer leaves of the Romaine and cut lengthwise from the core out, about 6 times. Lay the lettuce on its side and chop into small pieces. Rinse the lettuce in cold water and drain.

  3. In a small bowl mash the anchovies and garlic with a fork until a paste forms. Whisk in the lemon juice, vinegar, a 1/4 cup of cheese, mustard and mayonnaise. Slowly add the olive oil and whisk until smooth.

  4. In a medium bowl toss the drained lettuce with the tomatoes, onions and cooled Piemonte Rice & Grain Salad with the dressing until fully incorporated.

  5. Garnish with croutons and more cheese.
